Turkey Cous Cous Curry

I decided to go without a weekly shop and as the food was running out I created this marvellous little number!


What you’ll need:

  • 100g Turkey Mince
  • Approx 50g Cous Cous (I use a 70ml protein powder scoop as a measurement)
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • Mild (or hot if you like spicy) curry powder
  • 1-2 tbsp Natural or Greek yogurt
  • Dried Marjoram 
  • 1/4 cup of coconut milk 

What to do:

  • Place the Cous Cous in a bowl with 1/4 tsp curry powder, cover with boiling water and cover the bowl 
  • Fry the turkey mince according to the packet instructions, adding about 1/4 tsp of curry powder halfway through
  • Once the turkey is cooked add the coconut milk, garlic and onion to the pan with the turkey and fry on a medium heat for around 3-5 minutes or until the onion has softened slightly
  • Add the Cous Cous to the pan and stir
  • Once mixed, plate it up, add a spoon of yogurt and sprinkle on some marjoram. If you like spicy try adding some chilli sprinkles (I don’t because I’m a spice wimp)
