The All Round Go-To Tomato & Veggie Sauce

This is my new dinner sauce staple. The perfect accompaniment for pasta, rice, meat or fish dish!

What you’ll need: 

  • Approx 225g (1 small or 1/2 standard tin) of chopped tomatoes
  • 1/2 bell pepper (any colour: red, green, yellow, orange)
  • 3 Cherry Tomatoes, halved 
  • 1 Garlic Clove, chopped
  • Any other veggies of your choice (I’ve used radishes, Pak Choi, aubergine before)
  • Dried (or fresh) oregano
  • Dried (or fresh) basil
  • Pepper and any other seasonings as desired (chilli if you like it spicy!)
  • Balsamic Vinegar

What to do:

  • Open the chopped tomatoes and leave to one side
  • Wash, chop and prepared your veggies as required
  • Put 1 tsp of oil (olive or coconut) into a frying pan over a medium heat
  • Add the veggies to the pan and fry for approx 5 minutes
  • If required, slice the chopped tomatoes into smaller pieces and add them with the liquid from the tin to the pan 
  • Add a splash of balsamic vinegar and your desired seasonings (basil, oregano & pepper too) and stir for another 2 minutes
  • At this point your sauce is pretty much good to go, so add in your (cooked) pasta/rice/meat etc, plate up and enjoy!
