Simple Chicken Soup


What you’ll need:

  • 80g Cooked Chicken
  • 1 Carrot
  • Chicken Stock (see the recipe to make your own here), 4 ladels is usually enough for one generous bowl
  • 1 pot with a lid
  • If you’re making the mixed bean version; approx 80g cooked mixed beans*
    Or
  • 1/4 Cup of either Uncooked Pearl Barley, uncooked White or Brown Rice (or approx double the amount if you’re using already cooked

* If you have dried beens, be sure to leave them to soak overnight and cook as per the packet instuctions, they could be cooked in the stock but it can take up to 45 minutes.

What to do:

  • Add the stock to the pot and bring to boil
  • While the stock is heating, peel and slice the carrot
  • Rinse the rice, barley or beans
  • Once the stock is boiling, add the rice/barley (if you’re using it) and the carrot
  • reduce the heat to a simmer, cover and leave to simmer for approx 30 minutes (best to check after 15/20 minutes to be sure the stock isnt evapourating), if using the beans, add the cooked beans before the last 5 minutes to allow them to heat
  • Add the chicken to a bowl and pour in the soup
  • Enjoy!
