Scotch Broth “Dhal”

I say “Dhal” as I’m using the same spices but it’s more of dhal adaptation to make a quick and simple curry when you’re in a hurry! (See what I did there? Rhyming comedic genius…) 

Whole meal pittas would have been better but all I had was Ryvita!

What you’ll need:

  • 1/3 cup (approx 60g) dried (for dried you’ll need to soak them in water overnight), or 180g (usually around half a can) pre-cooked Broth mix, lentils or chickpeas
  • 1 small onion, chopped
  • 1 clove chopped garlic
  • 2-3 tsp curry mix or 1 tsp of each of the following: turmeric, cinnamon, paprika, cumin, ginger and garlic granules (optional)
  • Pinch of chilli flakes (or more if you like spice)
  • 3-4 tsp of powdered sweet potato (I get mine from Go Nutrition)
  • 1/3 cup coconut milk
  • Coconut oil (for frying the onion)

What to do:

  • Cooked your Broth mix/lentils/chickpeas as per the packet instructions
  • While they’re cooking, prepare your spice mix (only if you aren’t using a pre-made curry powder) and when the Broth mix/lentils/chickpeas have around 5 minutes left, fry your onion and garlic in around 1 tsp of coconut oil for 5 minutes to soften the onions
  • Once cooked, drain your broth mix/lentils/chickpeas, and add them to a pan on a medium heat with the coconut milk, onions, garlic and spice mix
  • Stir until the milk thickens to create a more sauce like consistency 
  • Turn off the heat, plate up, feel free to add pitta, naan or whatever your preferred curry accompaniment is!
