Pork and Pak Choi Cous Cous

What you’ll need:

  • 1 Lean Pork loin 
  • Approx 50g Cous Cous (I use a 70ml protein powder scoop as a measurement)
  • 40g Pak Choi, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 tsp Thai seasoning (optional, I used a Thai spice mix)

What to do:

  • Preheat the oven to 200c degrees (Celsius, fan assisted oven, adjust times according to your own oven)
  • Place the pork loin (wrapped in foil) for 20 minutes
  • While the pork is cooking (or when there’s around 5-10 minutes left), put the Cous Cous in a bowl with the seasoning, cover with boiling water and cover the bowl. Leave for around 5 minutes 
  • Once all the water is absorbed mix in the Pak Choi and pepper 
  • Once the pork is ready, plate up and enjoy!
