Haggis and Barley Stuffed Squash

Now admittedly haggis doesn’t provide much of use for those in search of Gains but, it was Burns night and as a Scot, I wanted to do something (sort of) useful with haggis!

What you’ll need: 

  • 100g Haggis 
  • 1/4 cup Pearl Barley
  • 10g grated cheddar cheese
  • 1 small Squash (any variety, just needs to be a good size for 1 portion) 
  • Salad and veggies for the side

What to do:

  • Rinse the Barley & cook per packet instructions (I usually boil for approx 30 minutes)
  • Preheat the oven (fan assisted) to 200c degrees (Celsius, adjust as needed for your own oven)
  • Cut the top of the Squash, clean out the seeds and rub lightly with coconut oil
  •  Place in the oven for 20 minutes
  • Cook the haggis as per the package instructions
  • Once the Barley is cooked, drain and mix with the Barley and about 2/3 of the cheese
  • Remove the Squash from the oven and stuff with the haggis/Barley mix, sprinkle the remaining cheese on top and put back in the oven for around 5 minutes
  • Remove from the oven, plate up and enjoy!
